Note on Soba (Buckwheat)

We serve soba noodles in this class. As buckwheat is present in our kitchen, we cannot guarantee a cross-contamination-free environment. For your safety, we do not recommend this class for guests with severe buckwheat allergies. Our menu also includes soy and wheat (in soy sauce and miso). Please contact us in advance for gluten-free or substitution requests.

What You Will Learn

Vegan Zaru Soba (Chilled Soba Noodles)

A 100% plant-based version of our traditional chilled noodles. The rich dipping sauce is crafted from premium Rausu kelp and dried shiitake mushrooms for a deep umami flavor. We use "Ni-hachi" noodles (80% buckwheat, 20% wheat) for the perfect balance of smooth texture and earthy aroma.

Vegan Maki Sushi (Rolled Sushi) with Savory Miso Tofu

Discover a unique and delicious twist on classic rolled sushi. The star ingredient is our homemade "vegan meat-miso" made from firm tofu and Hatcho Miso (a traditional, rich dark miso). Rolled together with fresh, crunchy vegetables, it creates a perfect balance of savory, sweet, and umami flavors in every bite.

Vegan Temaki Sushi (Hand-Rolled Sushi)

Get hands-on and creative with Temaki sushi! In this interactive and fun style of sushi making, you will wrap your own cone-shaped sushi using crisp nori seaweed, seasoned sushi rice, and a colorful variety of fresh, seasonal vegetables. It's a playful and delicious way to enjoy healthy Japanese cuisine.

Matcha (Premium Green Tea)

Experience the taste of Japan with our traditional, finely milled green tea. It features a beautiful vibrant green color and a rich, deep, and earthy flavor.

Warabi Mochi (Traditional Japanese Jelly Sweet)

A popular traditional, naturally vegan dessert. It is a chilled, delightfully chewy, jelly-like confection, typically enjoyed with a dusting of sweet roasted soybean

Why This Menu
