Our recipes use no fish stock (dashi), no animal products, and are fully plant-based with complete transparency.

What You Will Learn
1. Vegan Ramen (Two Types)
Create two bowls of Japanese ramen from scratch using:
・Kombu kelp
・Shiitake mushrooms
・Seasonal Kyoto vegetables
・Homemade vegan toppings
You'll learn how to develop deep umami without any animal products.
2. Handmade Vegan Gyoza
Learn the folding, seasoning, and frying techniques to create crispy, juicy gyoza filled with local vegetables.
This is one of the most loved parts of the class!
3. Aritsugu Knife Experience(Exclusive)
During the cooking process, you can try using Aritsugu knives, the legendary Kyoto knife brand from Nishiki Market.
These knives cannot be test-cut in the store —
but you can experience their sharpness.
