Planning to Buy an "Aritsugu" Knife? Why You Should Test-Drive It With Us First

Why we introduced Aritsugu Knives to our class (Nov 2025 Update)
This November, we made a big update to our kitchen.
We introduced a full lineup of Kyoto Aritsugu Knives for our guests to use.
Why? Because so many of you asked us about them.
Guests would say,
"I went to the Aritsugu shop,"
or
"I want to buy it, but I'm not happy that I can't test it out."
We used to just sharpen ordinary knives. But we realized:
If you are going to buy a lifetime knife,
don't you want to test it properly first?
The Reality of the Aritsugu Shop (It's Crowded!)
The Aritsugu shop in Nishiki Market is legendary.
But recently, it is extremely crowded.
I go there often, and there is always a long line just to talk to the staff.
For international travelers, time is precious.
If you go to the shop without preparation, you might spend hours waiting.
Even worse, if you are with a partner who isn't interested in knives, they just have to wait for you.

It's stressful for the buyer, and boring for the partner. We want to fix that.
Our Solution:
The "Test-Drive" Experience
We realized that our cooking class could be the perfect place for you to do your "homework" before buying.
* Test 7 Types of Knives:
From Chef's knives (Gyuto) to traditional vegetable knives (Nakiri/Usuba).
* Real Cutting:
Feel the sharpness on actual vegetables and fish, not just paper.
* Everyone is Happy:
When you research knives at the cooking class and are ready to purchase, your partner's waiting time will be shorter.
You're happy that the shopping went smoothly!
The store is happy that you bought it!
We're happy that you came to the cooking class too!
No one's bored. No one's waiting.
