Our vegan and vegetarian menus are carefully crafted to honor your beliefs, your health, and our planet.
Ingredients Transparency
We clearly state what is used — and what is not.
If you have any questions about ingredients, please feel free to ask before booking or during the class.
We do NOT use:
- Meat, poultry, fish, or seafood
- Animal-based broths (bonito, chicken, or pork)
- Gelatin or animal-derived seasonings
- Dairy products and eggs (for vegan menus)
We use:
- Locally sourced Kyoto vegetables and grains
- Soy-based ingredients such as tofu and miso
- Natural seasonings (kombu, shiitake, sea salt, rice vinegar, etc.)
- Organic or additive-free ingredients whenever possible
Transparency & Communication
Before your class, we confirm your dietary preferences and allergies.
During the session, we explain each ingredient.
